Introducing... Barwood BBQ
Meet Jake, the chef behind Barwood BBQ who will be joining us for our final Summer Street Food & Makers Market! We're working up an appetite looking through the photos here at Paper Daisy, and we can't wait to tuck in in Sat 2nd of September!
How did Barwood BBQ begin?
I've always worked in food, working as a chef in many cafes and restaurants in Brighton since the age of 15. A couple of years ago I began working on a market stall in the Upper Gardner Street Saturday market for a Sussex butcher, and one weekend was asked to cook a lamb for a farming award ceremony... I realised how much I loved cooking outdoors and soon afterwards, me and my dad set up Barwood Barbecue.
How has your business developed since?
Since then we've continued to barbecue for parties, weddings and other outdoor events, initially focusing on hog and lamb roasts, but now moving much more towards the beautiful salads, homemade sauces and condiments which I think makes us stand out from the crowd. This summer we've began to cater at festivals and food markets, and believe this is our next step.
What’s your favourite thing to make?
I'm super passionate about beautiful vegetables, so getting hold of a box of cauliflowers, peppers, courgettes, fennel (you name it), marinating them, and turning them into beautiful salads is a real favourite of mine. Our salsa verde is also super popular!
Do you have a best seller?
Our crispy skinned barbecued chicken thighs served in a flatbread with salsa verde, yoghurt raita, and a selection of our ever changing salads is always a big hit!
Do you have any plans for the future?
After winning a scholarship to Le Cordon Bleu cooking school in London, I'm hoping to move back to Bristol (where I've just graduated from) and develop my business further up there.
